Gardening is a healthy activity for many reasons. It connects you to nature and provides a chance to grow some of your very own organic produce. No matter where you live, you can grow herbs, flowers, tomatoes, brussels sprouts, and lettuce, even if it’s in a window box or on your patio. Simply trust that your seeds will grow, and express your gratitude by cooking delicious food.

Zucchini

Fresh Vegetable Stir Fry with Red Quinoa

2 tomatoes chopped

some carrots chopped

3 zucchini chopped

4 beets + beet greens chopped

3 tbs. evoo

1 onion chopped

3 garlic gloves minced

Add e.v.o.o. and garlic to pan and cook for 3 minutes on medium heat. Add onions and cook until onions are translucent. Add carrots and beets to pan and sauté until these are easily chewable. Then add the zucchini and continue cooking for 5 minutes. Garnish with chopped tomatoes and beet greens. Serve with quinoa.
