Fresh Vegetable Stir Fry with Red Quinoa
2 tomatoes chopped
some carrots chopped
3 zucchini chopped
4 beets + beet greens chopped
3 tbs. evoo
1 onion chopped
3 garlic gloves minced
Add e.v.o.o. and garlic to pan and cook for 3 minutes on medium heat. Add onions and cook until onions are translucent. Add carrots and beets to pan and sauté until these are easily chewable. Then add the zucchini and continue cooking for 5 minutes. Garnish with chopped tomatoes and beet greens. Serve with quinoa.
